Corn and Black Bean Salad

This simple mixture of goodness has been incorporated into a lot of meals I have made this year. It has accompanied some of my crock pot creations, been used as a side with my meals and also enjoyed as a snack.   It takes minutes to make and is very inexpensive, even with organic produce.  If you’re looking for a delicious and simple dish for the Super Bowl coming up or a new recipe to enjoy, this salad is the definitely the way to go.

Ingredients:
2 bell peppers, colors are your choice
1 onion
2 cans corn
2 cans of  black beans
1tbsp cumin
1/4 cup Red Wine Vinegar
Salt & Pepper to taste

Directions:
1. Chop your bell peppers and dice your onion.
2. Rinse your beans and drain your corn.
3. Pour the corn, black beans, onion and peppers into a mixing bowl.
4. Sprinkle in the cumin, pour the RWV then mix it all together for the perfect corn & bean salad!
