It’s #Skinny Guac O’Clock time

This is a recipe that has taken me quite a few times to master but I finally figured out the avocado to non-fat greek yogurt ratio. What’s great about this is that it not only lightens up your normal guacamole dip, but it also doubles it in size. #yaaaas
Guacamole is fun, you can add all sorts of stuff to it, corn, mango, beans, pomegranate seeds, peach chunks and my personal favorite – corn. However, It’s crucial get the correct avocado when making the dip or all the fun could be ruined…. If you’re going to be making it that day, make sure your avocado has a good squish to it. If you’re going to make it within the next few days, get one that is relatively hard.

Ingredients
3 Avocados
1 cup non fat greek yogurt plain (always Oikos or Dannon)
1/2 cup tomato, diced – I used half of a large heirloom from the store
Cilantro diced
1 Jalepeno diced
1/2 tbsp minced garlic
1-2 limes
1 tsp cayenne
1/2 red onion diced
1 tsp cumin

1. Cut, scoop and place avocados in a bowl. Save one pit to put in the dip when it is done to help keep it from browning. Mush it with a fork until smooth but still slightly chunky.
2. Mix in the cup of yogurt until blended.
3. Add the juice of one succulent lime, or two if they are on the dryer side, cumin, cayenne then mash. Once mixed, fold in the onions, jalapeno, tomatoes, cilantro, and garlic. Add salt and pepper to taste.
4. This guac pairs perfectly with my Baja Shrimp TacosGuilt Free & Healthy, Crockpot Chicken Fajitas and Skinny Ranch Taco Crackerole [lettucewraps]. Also great standalone as a dip for any fiesta.
